Red Chicken Chili
Saute:
2 Tbsp olive oil
1 onion
2 cloves garlic
Add:
1 can chicken broth
1 can chicken breast
1 can diced tomatoes
1 can white northern (or canellini) beans
1 can diced green chiles
1 jar (16 oz) green salsa
1 can corn (I used frozen)
Bring to a simmer until throughly heated. Garnish with cilantro and corn tortilla chips. This was about 5 minutes of effort and has a fantastic taste. Love it.
