Mango Salsa

2 mangos, diced
1 small red pepper, diced
2 green onions, chopped
1/2 cup cilantro, chopped
1 jalapeño, minced
juice of 1 lime
juice of 1/2 lemon
salt to taste

This salsa is best if made several hours ahead (or overnight).
I leave out the cilantro until just before serving.
Serve with pork, chicken, fish, or just plain chips. This one is sweet and spicy.

Tip: If you don't have fresh, ripe mangos, frozen mango cubes work great. Just thaw and dice.
